Streszczenie
najważniejszych
warzyw korzeniowych uprawianych na
świecie. Pochodzi od marchwi dzikiej (Daucus
carota subsp. carota). Ze względu na swoje
walory smakowe jest warzywem chętnie wybieranym
przez konsumentów, a jej spożycie
ciągle wzrasta. Celem rozdziału był przegląd
literatury naukowej na temat marchwi i jej
właściwości prozdrowotnych. W rozdziale
wykorzystano metodę tematycznego przeglądu
literatury. Na podstawie analizy literatury
przedmiotu badań stwierdzono, że korzenie
marchwi są bogatym źródłem związków bioaktywnych,
takich, jak karotenoidy oraz błonnik
pokarmowy, a także witamin i minerałów,
które posiadają liczne właściwości odżywcze
i prozdrowotne. Regularne spożywanie korzeni
marchwi, może obniżyć ryzyko rozwoju chorób nowotworowych, korzystnie wpływa
na nasz wzrok, może przyczynić się do obniżenia
ryzyka chorób serca, a także wspomaga
układ odpornościowy i pokarmowy. To cenne
warzywo powinno na stałe wejść do naszej
codziennej diety.

Due to its taste, it is a vegetable of choice for consumers and its consumption is constantly increasing. The aim of this chapter was to review the scientific literature on carrots and their health-promoting properties. A thematic literature review method was used in this chapter. Based on the analysis of the literature, it was concluded that carrot roots are a rich source of bioactive compounds, such as carotenoids and dietary fibre, as well as vitamins and minerals, which have numerous nutritional and health-promoting properties. Regular consumption of carrot roots, can lower the risk of developing cancer, has a beneficial effect on our eyesight, can contribute to lowering the risk of heart disease, and supports the immune and digestive systems. This valuable vegetable should become a permanent part of our daily diet.
