Streszczenie
Celem rozdziału była analiza wybranych
substancji antyodżywczych występujących
w produktach roślinnych, ich mechanizmów
działania oraz potencjalnych konsekwencji
zdrowotnych wynikających z ich spożycia. Na
podstawie dostępnej literatury naukowej i podręczników
akademickich dokonano przeglądu
takich substancji jak: lektyny, fityniany, inhibitory
enzymów proteolitycznych, kwas szczawiowy,
glikozydy cyjanogenne, alkaloidy
oraz taniny. Wskazano zawartość tych związków
w wybranych produktach spożywczych,
przedstawiono zakresy bezpiecznego spożycia
oraz czynniki wpływające na ich dezaktywację.
Podkreślono znaczenie umiejętnego komponowania
diety roślinnej oraz zastosowania
odpowiednich metod obróbki, które ograniczają
niekorzystne działanie tych substancji.
The aim of this chapter was to analyze selected antinutritional substances present in plant-based foods, their mechanisms of action, and the potential health consequences associated with their intake. Based on available scientific literature and academic textbooks, a review was conducted of compounds such as lectins, phytates, protease inhibitors, oxalic acid, cyanogenic glycosides, alkaloids, and tannins. Their content in selected food products was presented, as well as safe intake levels and factors influencing their deactivation. The importance of skillfully composing a plant-based diet and using appropriate processing methods to reduce the adverse effects of these compounds was emphasized.
