Streszczenie
Rosnące zainteresowanie zrównoważonym żywieniem, ochroną środowiska oraz zdrowiem
publicznym przyczynia się do dynamicznego rozwoju rynku roślinnych zamienników mięsa.
Celem rozdziału było przedstawienie aktualnego stanu wiedzy dotyczącego produkcji, właściwości
technologicznych, wartości odżywczej oraz perspektyw rozwoju analogów mięsa
pochodzenia roślinnego. W opracowaniu omówiono najważniejsze źródła białka wykorzystywane
do produkcji zamienników mięsa, w tym białka soi, pszenicy, grochu, innych roślin
strączkowych, grzybów, mikroalg oraz konopi. Przedstawiono również rolę poszczególnych
składników w kształtowaniu cech sensorycznych produktów, takich jak smak, tekstura,
soczystość i barwa. Zwrócono uwagę na znaczenie nowoczesnych technologii przetwarzania
żywności, które umożliwiają uzyskanie produktów coraz lepiej imitujących mięso pod względem
cech fizycznych i funkcjonalnych. Omówiono także korzyści wynikające z ograniczenia
spożycia mięsa, w tym zmniejszenie obciążenia środowiska naturalnego oraz potencjalne
korzyści zdrowotne. Jednocześnie wskazano na bariery ograniczające rozwój rynku analogów
mięsa, takie jak trudności w odtworzeniu charakterystycznego smaku i tekstury mięsa, obecność alergenów, wysoki stopień przetworzenia produktów oraz ograniczoną akceptację
konsumentów. Przegląd literatury wskazuje, że roślinne zamienniki mięsa stanowią obiecującą
alternatywę dla produktów pochodzenia zwierzęcego, jednak dalsze badania są niezbędne
w celu poprawy ich jakości sensorycznej, wartości odżywczej oraz bezpieczeństwa żywności.
Growing interest in sustainable nutrition, environmental protection, and public health is driving the rapid growth of the plant-based meat substitute market. The aim of this chapter was to present the current state of knowledge regarding the production, technological properties, nutritional value, and development prospects of plant-based meat analogs. The study discusses the most important protein sources used in the production of meat substitutes, including proteins derived from soy, wheat, peas, legumes, mushrooms, microalgae, and hemp. It also presents the role of individual ingredients in shaping the sensory characteristics of products, such as taste, texture, juiciness, and color. Attention is drawn to the importance of modern food processing technologies, which enable the production of products that increasingly better mimic meat in terms of physical and functional characteristics. The benefits of reducing meat consumption are also discussed, including a reduced environmental impact and potential health benefits. At the same time, barriers limiting the development of the meat analog market were identified, such as difficulties in replicating the characteristic taste and texture of meat, the presence of allergens, the high degree of product processing, and limited consumer acceptance. The literature review indicates that plant-based meat substitutes represent a promising alternative to animal-derived products; however, further research is necessary to improve their sensory quality, nutritional value, and food safety.
