| dc.description.abstract | Growing interest in sustainable nutrition, environmental protection, and public health is driving the rapid growth of the plant-based meat substitute market. The aim of this chapter was to present the current state of knowledge regarding the production, technological properties, nutritional value, and development prospects of plant-based meat analogs. The study discusses the most important protein sources used in the production of meat substitutes, including proteins derived from soy, wheat, peas, legumes, mushrooms, microalgae, and hemp. It also presents the role of individual ingredients in shaping the sensory characteristics of products, such as taste, texture, juiciness, and color. Attention is drawn to the importance of modern food processing technologies, which enable the production of products that increasingly better mimic meat in terms of physical and functional characteristics. The benefits of reducing meat consumption are also discussed, including a reduced environmental impact and potential health benefits. At the same time, barriers limiting the development of the meat analog market were identified, such as difficulties in replicating the characteristic taste and texture of meat, the presence of allergens, the high degree of product processing, and limited consumer acceptance. The literature review indicates that plant-based meat substitutes represent a promising alternative to animal-derived products; however, further research is necessary to improve their sensory quality, nutritional value, and food safety. | en |
