Streszczenie
Rosnąca świadomość konsumentów dotycząca znaczenia zdrowego żywienia przyczynia
się do zwiększonego zainteresowania żywnością funkcjonalną oraz produktami o właściwościach
prozdrowotnych. Jednocześnie przemysł owocowo-warzywny generuje znaczne ilości
produktów ubocznych w postaci wytłoków, które stanowią istotny problem środowiskowy
i ekonomiczny. Wytłoki owocowe i warzywne, mimo że są uznawane za odpady produkcyjne,
zawierają cenne składniki bioaktywne, takie jak polifenole, antocyjany, flawonoidy, błonnik
pokarmowy, witaminy, składniki mineralne oraz związki o właściwościach przeciwutleniających.
Celem rozdziału było przedstawienie możliwości zagospodarowania wytłoków pochodzących
z przetwórstwa owoców i warzyw jako wartościowych surowców do produkcji żywności
funkcjonalnej. W opracowaniu omówiono właściwości oraz potencjalne zastosowania
wytłoków z aronii, czarnej porzeczki, borówki amerykańskiej, żurawiny, buraka ćwikłowego
oraz pomidora. Analiza literatury wskazuje, że produkty uboczne przemysłu spożywczego mogą być skutecznie wykorzystywane jako dodatki wzbogacające żywność w związki
bioaktywne, poprawiające jej wartość odżywczą, właściwości technologiczne oraz walory
sensoryczne. Wykorzystanie wytłoków wpisuje się również w założenia gospodarki o obiegu
zamkniętym i koncepcję „zero waste”, przyczyniając się do ograniczenia ilości odpadów oraz
zmniejszenia negatywnego wpływu przemysłu spożywczego na środowisko. Przedstawione
wyniki potwierdzają, że odpowiednie zagospodarowanie wytłoków owocowo-warzywnych
stwarza możliwości opracowywania innowacyjnych produktów spożywczych o wysokiej
wartości prozdrowotnej.
Growing consumer awareness of the importance of healthy eating is driving increased interest in functional foods and products with health-promoting properties. At the same time, the fruit and vegetable industry generates significant amounts of byproducts in the form of pomace, which pose a major environmental and economic problem. Although fruit and vegetable pomace are considered production waste, they contain valuable bioactive components such as polyphenols, anthocyanins, flavonoids, dietary fiber, vitamins, minerals, and compounds with antioxidant properties. The aim of this chapter was to present the potential for utilizing pomace from fruit and vegetable processing as valuable raw materials for the production of functional foods. The study discusses the properties and potential applications of pomace from chokeberry, blackcurrant, blueberry, cranberry, beetroot, and tomato. A review of the literature indicates that by-products of the food industry can be effectively used as additives to enrich foods with bioactive compounds, improving their nutritional value, technological properties, and sensory qualities. The use of pomace also aligns with the principles of the circular economy and the “zero waste” concept, contributing to a reduction in waste volume and the negative environmental impact of the food industry. The presented results confirm that the appropriate utilization of fruit and vegetable pomace creates opportunities for the development of innovative food products with high health benefits.
